Ingredients
- 1 cup cooked quinoa
- 1-2 cups kale and/or arugula
- 1/2 avocado
- 1/2 cup sauerkraut, unpasteurized for gut-healthy probiotics
- 1-2 tablespoons pumpkin seeds
- 2 tablespoons extra virgin olive oil
- 2 tsp lemon juice dressing
- Salt and pepper ot taste
Preparation
- Prep in Bulk: Cook a large batch of quinoa on the weekend and store it in the fridge. This makes assembling this bowl in 5-minutes possible for lunch or dinner.
- In a large bowl, lightly massage the kale with about 1/2 teaspoon of olive oil and a small pinch of salt. This helps to tenderize it. If using arugula, skip the massage.
- Assemble the Base: Place the cooked and cooled quinoa in the center of the bowl, surrounding it with the greens.
- Add Toppings: Place the sliced or cubed avocado and the mound of sauerkraut on top of the greens and beside the quinoa.
- Finish: Drizzle the remaining olive oil and lemon juice over the entire bowl. Sprinkle the pumpkin seeds over the bowl. Season with pepper and additional salt if needed. Enjoy!
