Golden Turmeric Potato Spinach Bowl

Ingredients
- 4 large potatoes, diced
- 2 cups spinach
- 1 large onion, sliced
- 4 garlic cloves, minced
- 3cm fresh ginger, minced
- 2 tsp turmeric
- 1 cup water (add more if needed)
- Salt to taste
- 1 tsp chili powder (optional)
- 2 tsp black mustard seeds (optional)
Preparation
- Heat water in pan, add mustard seeds, onion, garlic, and ginger. Sauté 5 minutes.
- Add potatoes, water, turmeric, chili powder, and salt. Cover and cook 15 minutes until potatoes are tender.
- Stir in spinach until wilted and serve hot. Add a light drizzle of olive oil, if preferred. Pairs beautifully with grilled chicken breast or your preferred lean protein.
